QUICHE WITH SPINACH, CHEESE & SAUSAGE

An easy and delicious meal, add a fresh mixed green leaf and cherry tomato salad for lunch or dinner. Buon appetito!

INGREDIENTS

500g Coori puff pastry mix
200g swiss cheese
150g sausage
100g chopped baby spinach
salt &pepper
4 eggs beaten
200ml Gluten free bechamel sauce
50g grated parmesan


Cook the sausages until golden brown, cool and crumble into small pieces.

Combine the eggs, bechamel, parmesan, salt and pepper.

In a round tray place your puff pastry, layer the spinach, sausage and cheese in the bottom of the pastry, then pour the egg mixture on top and bake in a preheat oven at 180C for 40-45 minutes, until the mixture is set.
