PIADINA WRAP WITH GUACAMOLE

Served with guacamole, rocket feta and sundried tomatoes

INGREDIENTS
Piadina
2 tbs olive oil
50 g feta
1 avocado (well ripened)
1 fresh tomato
50 g rocket salad
1 red onion
80 g kalmata olives
2 cloves of garlic
80 g sun dried tomatoes
2 lime to juice
5 g dried oregano

 
Start with peeling the avocado to make the guacamole, take the seed out, mush theavocado with a fork, then add the juice of 1 lime, 1 chopped garlic clove, salt and pepper and leave it aside.

Now take the sundried tomatoes and blend them untill nice and smooth, do the same with the kalamate olives, but in this case not too smooth.

In a bowl mix the rocket salad with the rest of the ingredients, feta crumbled in small pieces, dried oregano, lime juice, salt and pepper and the red onion finelly sliced.

Warm up the piadina in a dry stainless steel skillet over a medium heat and cook for 30 seconds each side, once ready spread a layer on one half of the piadina with with the sundried tomatoes paste and the other half with the blended olives and then a last layer in the centre of guacamole.Place the salad mix made earlier in the middle and wrap up it up, it is now ready to eat!
