MEDITERRANEAN SALAD

TAKES 40 MINUTES

A stunning salad for a summer's day, with the saltiness of the parma ham off-set by the luscious Olive Oil and earthy freshness of the spinach

FOR THE SALAD

2 fresh tomatoes
150g of baby spinach a bunch of basil
400g of Gluten Free bread ( for croutons)
10g of fresh thyme black pepper
100g green and black pitted olives
30g pinenuts
8 slices of parma ham

FOR THE DRESSING

3 tbs olive oil
1 tsp of dijon mustard
1 garlic clove
juice of 1 lemon


Wash and slice the fresh tomatoes, peel and chop the clove of garlic then mix it with olive oil, dijon mustard, the lemon juice and a pinch of salt and pepper, to make the dressing.

Toast the pine-nuts in a pan until nice and brown, leave the pine-nuts on a side and in the same pan add one tbs of olive oil and a slice of bread, fry the bread well and just before the bread is ready add fresh thyme to it.

Mix all the ingredients for the salad on a plate, baby spinach, basil leaves, olives and croutons, pour the dressing all over the salad then add the parma ham. Finally. sprinkle the plate with the pine-nuts and enjoy!
