Brioche Butter Pudding

This delicious brioche butter pudding has an interesting twist on the traditional recipe and takes just 45 minutes to create. The use of coconut milk gives it the perfect creamy consistency and the use of palm sugar and bananas help to keep it healthy! It is an incredible dish to serve at a dinner party because of the homely smell and the unbeatable flavour but is also easy enough to make for a night in on your own! 

If you want to make this dish then you will need the following ingredients:
6 slices of brioche (made with Coori brioche mix)
500 ml of coconut milk
200 g of chocolate chips
50 g of butter
2 bananas
2 eggs
80 g of palm sugar

Before you get going you will need to use our Coori Brioche Mix to make the brioche! You must also preheat your oven to 190C and grease a medium sized baking tray. The next stage is to slice the bananas into 1cm thick discs and then mix the coconut milk together with the eggs and whisk.

Next, layer three of the brioche slices in the baking tray and add in the banana and the chocolate chips. Add the last three slices of brioche on top and then pour the egg mix over the top. Leave the tray to absorb the egg mix for approximately ten minutes before you sprinkle some palm sugar over the top and place in the oven. Cook for 30 to 40 minutes as the pudding turns a warm brown colour.

You can then serve with your choice of fruits or cream! Delicious and gluten free!
