Breaded Chicken Rolls Stuffed with Courgettes and Goat Cheese

This dish is as fun to make as it is delicious! It is great to serve as a starter or side dish during a dinner party or even simply for an indulgent meal for one. With just a little bit of practice you will soon be a pro at making this recipe which is pleasantly filling and wonderfully nourishing. The dish will take approximately 30 minutes to cook and will serve four people.

Ingredients:
•    1 big chicken breast
•    2 courgettes
•    ½ cup of goat cheese
•    1 table spoon of fresh or dried marjoram
•    Salt and pepper
•    2 beaten eggs
•    1 cup of Coori breadcrumbs
•    2 cups of vegetable oil
•    1 tablespoon of olive oil

Method:

The first thing you will need to do is to thinly slice the courgettes lengthways into four. You can then brush the slices with olive oil and grill them for two minutes on each side. Once you have done this, set them to one side.

Next, in a large bowl, combine the goat cheese with the marjoram and a pinch of salt and black pepper. Take the chicken breast and cut it lengthways into four pieces and then use a mallet to flatten each slice so that they are 1cm thick. You can now place the grilled courgettes on the chicken slices (two slices of courgette for each chicken slice). The next step is to spread a spoonful of the herbed goat cheese mix onto the chicken and tightly roll up each piece.   

You must then take two bowls, one for the eggs and one for the breadcrumbs, and dip each roll into the egg and then into the breadcrumbs (make sure they are all nicely coated). Then, in a large frying pan, heat the vegetable oil until very hot and gently place the rolls into the pan, ensuring they fall away from you. You must leave this to cook for approximately five minutes until golden brown. Finally, drain off any excess oil with a kitchen towel and serve with roasted vegetables or a salad of fresh greens.
