I am a massive fan of brunch and as a celebration of that love I decided to indulge myself on the 4th day of my gluten free challenge. I whipped up an exciting dish of Moroccan style eggs poached in a spicy tomato sauce, mopping up the sauce with some gluten free Italian crisp bread slices. The bread had a delightful crunch and was a great companion to my spicy eggs. later I took a different route home from work and stumbled upon a fishmongers with some beautiful mussels in the window. Suddenly inspired, I quickly purchased them before hurrying home to rustle up a super luxurious gluten free seafood spaghetti. The texture of the pasta was great and I was still able to keep it al dente enough to satisfy my Italian friends. Overall it was a highly successful day with great gluten free food.
On day 5 I had 3 early morning appointments and so once again skipped breakfast. When I came home I tucked into the left over seafood pasta from the night before, which was still just as scrumptious. At dinner I grabbed the gluten free pizza bases I had been eying up all week. Finally succumbing, I made a mozzarella, anchovy and courgette pizza. The base itself was lovely and soft and it crisped up nicely in the oven. If you are a big fan of extra crispy pizzas I would recommend putting the base in the oven for 5 minutes before you add the sauce and toppings. The pizza was so easy and quick to make and was definitely a lot healthier than the takeaway pizza I would have normally lazily ordered. Once again I have eaten nothing but fantastic food. I am certainly not a chef but I have surprised myself with the tasty dishes I have come up with so far. The gluten free challenge has inspired me to get back into the Kitchen.
