So today is the very first of my one month gluten free challenge. The anxiety i felt when i first awoke was swiftly erased when i tucked into my devilishly moreish gluten free chocolate cereal. It was super tasty and very sweet. I don't think i will be able to have it every morning, but it was perfect for an indulgent Sunday morning breakfast in bed.
At lunch i became nervous again because i knew that now i would have to do some real cooking. I dug through my gluten free goodies in my monthly box and pulled out the mushroom Risotto mix. It was really quick and easy to make and i think it was the most successful risotto i have ever made.I stirred in plenty of butter served it with a few shavings of Parmesan and some fresh asparagus. This was a luxurious lunchtime treat which easily rivals the microwaved pub lunch i would have normally had.
Dinner was a delicious simple beef burger. I followed the easy peasy recipe on the Coori site and 20 minutes later i was in hamburger heaven. So far so good. I am eating better than ever and loving my Coori free from products.
