Julia Zardetto - My Career and Inspiration!

If you have been following our Coori blog then you will know that we regularly post about what we are up to over at Coori and our plans for the future. I would now like to take this opportunity to tell you a little bit about myself and my long career in the food industry! Over the past few years I have been involved in many exciting ventures related to food and the restaurant industry. I have enjoyed all of these experiences greatly and I'm now very pleased that it has led me to my greatest achievement yet - Coori! 

My passion for high quality gluten free foods stems from my own intolerance to gluten. I know first hand the struggle to find delicious, flavourful foods that do not contain any gluten or allergens. Not only can this make dining out a nightmare, but it also complicates grocery shopping which should be a simple process!

I started working in the catering industry more than a decade ago, although I first came to live in the UK in 1997. It was in the first of these years that I saw such a huge gap in the market when it came to gluten free dining. This is what inspired me to open Bruschetta in 2008, a restaurant serving 100% gluten free foods in Kingston-Upon-Thames. This was a fantastic experience for me and really gave me the opportunity to commit to experimenting with the development of gluten free foods.

However, long before I opened Bruschetta, my first restaurant venture was the Alimentari George Best Cafe, in partnership with George Best himself. This adventure also involved a number of other experienced restauranteurs and wine connoisseurs! I had the privilege to learn a great deal about the food industry during this time! This was way back in 1998 and was a very exciting experience for me.

In the last few years I have been focusing more on developing my own recipes for great gluten free food. Since Coori opened, it has been my aim to share these recipes with everyone and also to promote other free from foods that I have discovered. Especially those with an Italian twist!

It is my aim to not only provide amazing gluten free and free from foods to people around the world, but also to support people who are living with coeliac disease.
